Coffee is the focus, with four blends and a rotating selection of single-origin coffees. The range includes Coffee Coffee, Good Day Coffee, Rogue Coffee, Dark Coffee and Decaf Coffee, as well as individual coffees sourced from producers in places including Rwanda, Burundi and Peru. Redbrick says it allows customers to choose options such as bag size, grind setting, delivery frequency and subscription duration, making the range suited to regular home drinkers as well as people buying coffee for a workplace. Its coffee is also available for wholesale customers, with the team working with cafés and other businesses on an approach suited to their needs.

The roastery’s approach is centred on sourcing, roasting and consistency. Redbrick has built relationships with coffee producers through Melbourne Coffee Merchants and Cofinet, and says these connections help it understand how the coffee is produced and maintain quality in the cup. In Fyshwick, the team roasts five days a week on a 30kg Giesen and an original 12kg Probat, then cups each batch to check the result. That makes the venue especially relevant to coffee drinkers interested in the process as well as the finished brew.

There is a strong Canberra story behind the name. Redbrick began in 2011 in a small suburban café lined with Canberra bricks, where a roaster, milk crates and plenty of conversation helped create a community around coffee. The current Fyshwick roastery is larger and more established, but the business says its focus remains on connecting people with coffee. For anyone wanting to improve their own setup, Redbrick also runs a two-hour in-person Home Barista Course covering machine setup, pouring basics and milk technique. It is a good fit for solo coffee drinkers, home brewers and workplaces looking for a local roasting partner; the website does not position the Fyshwick site as a dedicated family or date venue.
